You know...I've always wondered why they call it "Hard" Cider when it's so easy to make??? Hmmm :? ;-)

Last year I made a cider with Mangrove Jack's dry cider yeast and it had a strong sulfur smell that took forever to to dissipate. I can't remember if I added yeast nutrient. This year I used White labs english cider yeast, made a starter with DME and added yeast nutrient. It finished in a week and has no sulfur smell. Taste is a little boring though, so I think I need to adjust with acid and maybe tannin. If you have any tips on adjusting a fermented cider to taste, let me know. I'll probably also stabilize and back-sweeten a little before I keg.

I’m outta bottles so....luckily a friend sold me some Gibson county honey, so I made some JAOM and should have bottles by the time this is ready. Likely cork them. One is JAOM recipe and one is blueberry vanilla.

Hope to clean out a case of bottles soon for a winter brew.

Used Saflager 34/70 yeast cake from German lager I just kegged.
