Help me build an IPA (hop combo ideas)

Post by Jeremy Dunn » Thu Feb 09, 2017 10:26 am

I have a variety of hops in my freezer and I'm having trouble deciding on a hop combo for an American IPA. I don't have a large amount of any of these.
Any suggestions on what hops listed below would go good together? Any hop combos you don't like?

Wakatu
Meridian
Motueka
Willamette
Mozaic (only 1 oz, 2015)
Hallertau
Magnum
US Golding
Chinook
Citra
Columbus
Bravo
Saaz
Lemon Drop
Pacifica
Azacca (1 oz)
Strisselspalt
Cascade
Green Bullet
Calypso
Perle
German Tradition
Simcoe

I found this the other day. It's an older list but you may find it interesting. As you can see several varieties are missing.

Thanks, Steve.

The last IPA I made had a bunch of hop varieties I hadn't used before. I paired them by just reading the descriptions, but I didn't really care for it.

This time I think I'm going to go with:

1 oz Chinook @ 60 minutes
1 oz Columbus @ 20 minutes
1 oz each Citra, Simcoe, Azacca @ 10 minutes
Dry hop with 1 oz each Columbus, Citra and Simcoe

Here is my favorite hop combo for my ipa's 0.5 oz (14 g) Nugget pellets, 13% a.a. (60 min)
1.0 oz (28 g) Citra pellets, 12% a.a. (15 min)
1.0 oz (28 g) Mosaic pellets, 12% a.a. (15 min)
1.0 oz (28 g) Citra pellets, 12% a.a. (steep 10 min)
1.0 oz (28 g) Citra pellets, 12% a.a. (dry hop 5 days)
1.0 oz (28 g) Mosaic pellets, 12% a.a. (dry hop 5 days). 60 ibu's Since you don't have any Nugget sub Columbus in its place. If your feeling adventurous I have a a lot of Mandarina Bavaria hops that I been experimenting with that you could try in place of one of the other hops or dry hop with.

I just tried the Stone/Odell/Marble collaboration, "Megawheat". Made with Motueka, Mosaic, and Mandarina Bavaria hops. So good!

Have you ever dry hopped with a hop that you didn't use in your boil? If so is it a subtle difference, a good addition, or is that frowned upon?

I'm curious because I used Galaxy and Cascade in mine and I wanted one more citrus hop (Citra). I just didn't know if that would affect the hop character since I imagine the hop would have similar qualities.

Sure, you can dry hop with varieties you didn't use in the boil and it'll make a noticeable difference. How much of a difference I guess just depends on how much you use and if you only dry hop with Citra or combine the Citra with your other dry hops.

Jeremy have you seen this site? I found this today which has a nice description of each hop along with some comments from brewers on some pages that provide a combination they may have tried. I was looking for a description on some of the hops I had bought from Rebel Brewer since I had no idea on what some of their notes were.
