Tried to lighten up my Old Ale
Taste good but needs some more body in the next batch
This is a clean, easy drinking English beer.
With some spices could be a good Christmas Beer.
Heres's the latest 5 gal recipe

A06 Test, New Type Old Ale Lite
Brewer: Don Heisler
Style: Old Ale (lite)

Boil Time: 90 Minutes

Ingredients:

2.00 oz Willamette [5.30 %] - Boil 90.0 min Hop 34.1 IBUs
1.00 Items Whirlfloc Tablet (Boil 15.0 mins)
1.00 oz Fuggles [5.40 %] - Boil 15.0 min Hop 8.0 IBUs
0.50 tsp Wyeast Yeast Nutrient (Boil 10.0 mins)
1.00 oz Fuggles [5.40 %] - Boil 0.0 min Hop 0.0 IBUs
1.0 pkg NB NeoBritannia (Wyeast Labs #1945) Yeast
(276 Billion yeast cells needed)
Mash
154.0 F 70 min

Sparge: Fly sparge with 5.25 gal water buffered 5.8pH

Notes:
Yeast is 4 months old, making several small starters over 5 days.
Ended up with 300 Billion yeast cells.

Added Chocolate malt last 10 min of mash

70 Min Mash; 90 Min Boil
Keep in fermintator (or use a secondary until all the yeast drops out)

Condition min of 30 days.

10 gallons of dark strong @ 9.5%.
Captain crush smoked through the grain bill. Definitely worth the cash. There's your bag challenge.

Right now we have several things in carboys either aging or fermenting:

Beers -
5.5 gallons Rye IPA - aging in secondary fermentation until I have an empty keg
3 gallons "The kitchen sink (now with more wormwood)" - aging until I get the guts to try it again. 1/2 ounce of Wormwood for 3 gallons may have been too much
5.5 gallons 120 minute IPA - racking into secondary this evening. Will be dry hopped in secondary and then bottle aged for several months
5.5 gallons - Maddox Pell ell (Pale Ale) - in the boil pot while I type this up

Wine, Cider, Mead -
6 gallons Blueberry Cider - primary fermentation
1 gallon Rose hips wine - clearing in secondary
1 gallon Elderberry wine - clearing in secondary
1 gallon Apple cherry wine - clearing in secondary
6 gallons Candy can wine - finishing fermentation
4 gallons Coffee wine - clearing/aging in tertiary
1 gallon Mojito Mead - primary fermentation

Bottled wines -
3 different blueberry
Lemon
Tropical fruit
Strawberry/blueberry
Strawberry/cherry/blueberry
Merlot
Peach vanilla


I would be happy to share the recipes for any of these if anyone is interested. Also, some of these will probably make their way to upcoming meetings.

Cream Ale to be kegged this weekend and a Zombie Dust clone that is going to be dry hopped this weekend. , honey blonde being brewed this weekend.

Maddox, you guys are off the hook! Wow you have quite a large selection going on there! I would like to learn about making small wine batches from you sometime!
