I had a few requests for the simple kombucha instructions that I passed out at the last meeting.

Simple Kombucha Instructions

Equipment needed:
Gallon Jar
Coffee filter or fine cloth
Rubber band
Strainer (optional)
Ingredients:
SCOBY (Symbiotic Culture Of Bacteria and Yeast)
1 cup of starter (from previous batch)
10 black tea bags
1 cup sugar
1 gallon filtered water
Procedure:
1. Bring 1 gallon of filtered water to a boil.
2. Turn off the stove and add 10 black tea bags to the pot.
3. Cover and let cool to room temperature.
4. Remove the tea bags and add 1 cup of sugar; stir until dissolved.
5. Pour tea into the jar, then add SCOBY and cup of starter.
6. Secure the coffee filter or fine cloth with a rubber band.
7. After 1 week, taste for preferred sourness; if OK, strain into bottles or container.
If more sourness is preferred, taste test again after a few more days.

Notes:
Keep finished Kombucha in the refrigerator.
Ideal fermentation temperature is between 70 – 80.
Be sure to reserve a cup of kombucha for the next batch.
You can add fruit, herbs, spices to the bottles. (example: Orange, Lemon, Berries, Ginger,Thyme)
