I wanted to share some details that we've been discussing regarding Barrel Brew Day - which is less than a month away - on March 4.


With such a big beer, this Belgian Quad recipe will include 19 lbs of grain! I suppose we could adjust for anyone who would need to bump it up with some DME and use less grain. If so, let us know! Citing a brulosophy exbeeriment with regard to boil times, we believe we should be good with a 60 minute boil, but with the luxury of preheated water at Carson's, a 90 minute boil isn't out of the question.


For the yeast, we have decided to try our hand at yeast washing http://homebrewacademy.com/yeast-washing/ Cesar, John Mullins, Jeremy Dunn, and myself are brewing some sessionable Belgian beers (Trappist Single) using either WLP500 or WLP530. We will then utilize those yeast cakes to pitch into our big batch. Nothing like some drinkable starters! :beer9


Now, for the barrel. There's a very good chance that we will be reusing the Knob Creek barrel from last year, which means that we will need to keg that one on the same day we refill it (approx 2-3 weeks after our brew day) rather than kegging it on brew day.

I did get a larger pot but I'm only at an 8 gallon so I'll likely need to scale down how much grain I'm able to use on a 6 gallon boil. Will this be an issue? I'm not on a large scale as some of you and unfortunately Christmas only offered me an 8 gallon pot. I'll use whatever I can to make this brew happen and I'd still like to brew.

Steve, I have an extra 15 gallon pot you can borrow that day.
Preboil volume is 8.29 gallons. Do you have a burner that could bring that volume to a boil?

Yes I have a burner and a stand. I brewed last year and had to borrow a pot so I guess I'll be that guy lol. I appreciate the lend!

Whoever cannot mash 19 pounds of grain, or does not want to, we will let you substitute 5# grain for 3# DME so you'll only need to mash 14#, perfect for BIAB. YOU MUST LET US KNOW SOON!

2016 Barrel Brew is now at Evansville Brewhouse. Go visit it and give it a loving pat. The 2017 Barrel Brew will be at Evansville Brewhouse on the sidewalk behind the bar. Jeff will ferment the beer for us. If weather is poor we have a backup plan. After fermentation, we will keg the 2016 RIS and refill same barrel with the 2017 Quad.

Adam and Will successfully made dark candi sugar using info from this link. I have a candy thermometer so would be willing to give it a shot. How many pounds do we need?

14 lbs (1 lb per batch). I figure we can cut the Special B in half and keep close to the same target color if we end up adding dark candi sugar.

I'm going to do a few experiments this week also.

We may be on to something here. I just did a test using 1 cup sugar + 1/2 tsp lime + 1/2 tsp yeast nutrient + water as described in this article:

I took samples all the way until it got pretty dark and it tastes good! No bitterness, but also not as complex as the actual belgian candi syrups you can buy.

I'm going to try the method you posted next (just sugar + yeast nutrient + water) and see how they compare.

Do you have pics of the different colors? I have not tried the Hirsch-Schmidt process yet.

I found another new recipe online for candy sugar, but it calls for all kinds of crazy ingredients like starting fluid, batteries, coffee filters… LOL

Gotta finalize plans. Here are the 12 Brewers: Cesar, Chris, Nate, JAM, Sky, Josh, Jeremy, Dwayne, Greg+Will, Kenny, Jordan, Steve
Steve wants the DME option. I'd order two more DME setups just in case. I'll make final announcement at meeting tomorrow for last two slots. Reminder, cost is $10 per batch.
