I ended up using Maris Otter with the HBC 438 hops and White Labs WLP028 Edinburgh Scottish Ale yeast. I boiled some of the mash for pseudo-decocotion. I also boiled down some of the wort for caramelization. I think OG was around 1.050. First wort hop then hop burst at 5 minutes and in whirlpool.

Ha! I thought it was hands holding till you mentioned it. I see the broken bottle now.
